Ski Montana! It is coming down. The most snow will fall on South Dakota, southwest North Dakota and far southeast Montana. So I’m going to post here a good recipe for a hearty soup that makes 8 servings. Get out the biggest pot in the ski condo. You need only one, so clean-up will be easy! This is going to simmer a little while once you combine all the ingredients, only about 15 minutes, so this is a quick meal. Goes well with crackers, biscuits or cornbread, too. 4 tablespoons extra-virgin olive oil
2 cups diced yellow onion
8 large garlic cloves, roughly chopped
2 (32 ounce) boxes vegetable broth
8 cups packed chopped red Swiss chard
2 (14.5 ounce) cans Italian-style diced tomatoes
2 (14.5 ounce) cans cannellini beans, drained and rinsed
3 (three) large carrots, peeled and sliced
1/2 cup chopped flat leaf parsley
Cayenne to taste. Serves 8.
